Soba Salad with Crispy Salmon Skin

Do You Like Salmon in Your Salad?

How about crispy salmon skin in salad? 

The first time I had a salmon skin was at an Izakaya in Japan. I was amazed how crispy it was, and it's so addictive. And I learned that you only bake the salmon skin to make it. 

This soba salad is packed with umami of the baked salmon skin and vegetables. It's a healthy and hearty salad. 

Servings: 2-3

Time: 20 min

Ingredients:

2 pcs Salmon (about 4oz each)

2 servings Soba noodles

1 pc Cucumber

1/2 pc Carrot

8/1 pc Daikon radish

Scallions

Sesame seeds

--Sauce--

3 tbsp Soy sauce

2 tbsp Rice vinegar

1 tbsp Sesame oil

Ginger

Instructions:

1. Remove the salmon skin, and cut the skin into strips

2. Foil the Salmon, also place the skin strips on parchment paper, oven bake for 20 min at 400º

3. Cut cucumber, carrot and daikon into thin strips, and rub with a pinch of salt

4. Make sauce by mixing soy sauce, vinegar, sesame oil, grated ginger

5. Cook Soba noodles, drain the noodles, rinse it with water

6. In a bowl, add the noodles, vegetables, salmon, and sauce to mix

7. Add the crispy salmon skin at last
